I haven't tasted this recipe in a long time, but even as a kid
I loved the flavor. It has a sophisticated and refined flavor
that I think you will enjoy. When I was growing up I didn't
realize how talented my mother was, but she used to prepare
fantastic meals on a daily basis. In today's standards what I
ate was gourmet food, no doubt about it. Well this recipe is
easy and relatively quick but it will hit the spot.
This recipe is cut in 1/2 for 2 servings, if you want to
increase for 4 servings just double ingredients.
2 loin pork chops 1/2-3/4 inches thick cut one slice in the
middle of each and insert 1 clove. Season flour (salt, pepper,
paprika) and dip chops and cover with flour mixture. Brown them
lightly in bacon grease and place them in a baking dish.
Combine 1/4 cup water, 1/4 bay leaf, 1 tablespoon vinegar, 1/2
tablespoon sugar and a 1/4 cup of sour cream. Pour this mixture
over the chops, cover with aluminum foil and bake @ 350 degrees
for about (more/less) 1 hour until done.
Serve with jasmine rice and green beans, the juice can serve as
a delicate sauce that you use for the rice and green beans.
Obviously you can add your favorite sides, but do use the sauce
as it is fantastic.
