Oven Beef Tenderloin Recipe

Beef Tenderloin is a great meat for a sandwich. This type of beef is naturally tender and using this recipe will bring out the true flavor of the meat. You can use 1/3 to 1/2 lb. per serving. If the edges of the fillet are thin, fold them over and wrap with bacon and secure with toothpicks. Cover the rest of the fillet with bacon as well. Salt and pepper and dredge in flour.

Preheat to 500 degrees place fillet on a rack on a roasting pan and place a few pieces of bacon on the bottom and place in oven. Cook fillet for 15 - 20 minutes per lb. Do not cover or baste as it cooks. When you cook it this way you can use the drippings for gravy for the meat and mashed potatoes. Just take a 1/4 cup of cold water and mix in 2 - 3 tbsp. of flour and pour into the roasting pan and stir well to create a smooth mixture. If you want to make richer gravy, stir in a little sour cream. Salt, pepper and add other herbs to flavor as to your preference.
