Sometimes I like to try recipes that are different from most of
the ordinary recipes. This is a good recipe to break out of the
everyday cooking. It is easy to prepare and I have cut back the
portions for 2 servings, if you wish to increase the servings
just double the recipe. So here we go:
1 - 6 ounce package of Long grain/Wild Rice (your choice) Cook
the rice according to directions and to spice up the flavor
substitute chicken broth for water.
4 - Pieces of chicken (2 breasts/2 leg quarters) your pick.
Place chicken in baking pan, baste with butter (1-2
tablespoons) add a little salt and pepper and cook in oven @
350 degrees for about 30 minutes.
Take 1 tablespoon of butter add 1/3 cup of orange marmalade and
1/4 cup of frozen orange juice concentrate combine in small
saucepan. Heat to a boil, and then remove from heat. In a cup
take 1/2 teaspoon of cornstarch and dissolve with 2 tablespoons
of cool water and pour into the sauce pan. This will thicken
the orange sauce. At this point if you wanted to add nuts
(sliced walnuts, pecans or almonds) about 1/4 cup. You could
instead dice onions, pepper or others you prefer.
Take cooked rice and put into baking dish, place the chicken on
top and pour your sauce on top of the chicken. Put in oven and
continue to cook uncovered for about 15 minutes or until top of
chicken turns brown. Take from oven and enjoy the flavor of
orange.
