Fancy Cream Fruit Salad

This is a recipe that my Mom used to make and I think she made a lot of recipes just for me. The reason I say this is because you know finicky kids are and how hard it is to get them to eat things that are good for them. Kids love recipes like this so it makes it easy to feed them good food. With this recipe you need to let it chill in the frig for 24 hours prior to serving. This recipe is for 6 -7 servings.

Ingredients:

Syrup Mixture

1 - Egg yoke
1/8 - cup of sugar
1/8 - cup of heavy cream
1 - Juice of lemon (fresh squeezed)
1/16 - teaspoon of sea salt

Fruit

1 - Can of drained diced pineapple (16 oz)
2 - Cups Bing cherries (deseeded)
1/2 - lb. of grapes (red or green) sliced in 1/2
1 - Cup of sliced almonds
1/2 - lb. of mini marshmallows
1 - Cup of heavy cream (whipped)

Preparation:

Mix the syrup ingredients together and place in a double boiler and cook until thick, as it heats up stir constantly. In a bowl mix the fruit ingredients and pour the thickened syrup ingredients over the fruit. Mix and cover and chill for 24 hours.

Serve on lettuce with mayonnaise as the dressing or with whipped cream as a dessert. I loved it both ways even as a kid, I think you'll love it as well.

This fruit salad is great for summer and you can feed this to kids as they will love it and not realize that it is good for them. Easy to make and sure to get you compliments galore.
