Now if this isn't a southern recipe, I don't know what is. When you think of collard greens, you think of the Deep South, Alabama, Georgia, etc. You think of cotton fields and red clay. This used to be a staple food and if you prepare it properly, it is a good side vegetable. The thing about collard greens is that you need to wash it thoroughly before cooking. Usually it will have sand in it and its best to wash so that you get rid of the sand. Although sand is good roughage and can clean out your system, but it’s that grittiness that is hard to get used to.
Ingredients:
2 - 3 - lbs. of collard greens 1/2 - lb. of bacon 1 - tbsp. of olive oil 1 - tbsp. of vinegar (pick your flavor) 1 - Teaspoon of lemon juice 1/2 - cup of minced onion 1 - Teaspoon of sea salt
Preparation:
Cook the bacon until crispy, save the drippings and chop up the bacon. Wash and chop up the collard greens, put in boiling salted water and cook for about 20 minutes. Drain the greens and place back in pan, put in bacon and drippings, oil, vinegar, lemon juice and onion, mix ingredients and cook on medium-heat for about 5 minutes. You are not really trying to cook, but meld the flavors together.
This is great with pork chops and wild rice. Try it you'll like it.

Regular guy that enjoys cooking food as a hobby, although being single if I don't prepare my meals, who will? I like exotic foods and not afraid to try anything at least once. My motto is if you can eat it, then I can prepare it. Article writing is new to me and if I get real good at it, maybe I'll author my own book.
