In the heat of the summer, I like to have food that is soothing and cool. Well, this recipe is one of those and is especially good for picnics or out on the boat. I seem to be writing about recipes that you can tweak any way that you wish and this one is no different. You can serve on lettuce or as a sandwich.

The Ingredients:

2 - Cups of diced cooked chicken
3/4 - cup of sliced celery
1/2 - cup of sliced green onions

Chill the above ingredients, when ready to serve put into bowl and add:

1 - Cup of mayonnaise

Salt and pepper to taste and mix ingredients thoroughly. I like to prepare this ahead of time and let the ingredients chill together for the flavor to meld properly.

If you have read some of my other recipes, then you are getting the idea that I personally enjoy my food spicy hot. Well you can add red cayenne pepper or fresh diced jalapeno if you dare. The nice thing about recipes like this is you can be creative as you want. You could put nuts such as walnuts, pecans or pine nuts into the mix, to give you a more complex taste. Like I always say, don’t be afraid to experiment.
