Canned Salmon Recipe

It is hard to believe that you can get any fish that you like, fresh or as close to it as possible. There was a time that you could only get Salmon in a can because they didn't have all the technology that we have today. Boy, times have changed, if you are under say 35 you might not realize this fact. Anyway, my mom had a killer recipe that takes fish in a can and turns it into a fantastic tasty treat. I know you can't wait for this one, so here goes.

1 or 2 cans of Salmon (6 or 8 ounces)
1 or 2 eggs (1 egg per can)
1 or 2 sleeve/s of Ritz crackers (as needed)

Open and drain water from salmon and put into a mixing bowl. Add an egg/s and a little salt, pepper and paprika to taste. Mix ingredients, it should be a thick texture (a little watery), now crush (it's ok to be a little chunky) the Ritz crackers and combine with salmon and egg. That should thicken mixture to a hamburger type consistency. Now form into patties about 1/2 inches thick. In a saucepan heat olive oil and fry the patties until crispy on both sides.

Man, for being as simple a recipe as this you can't get any better eating than this. It's called the Salmon burger or not.
