If you have a Chili's restaurant in your neighborhood and have tried the cabbage wraps, this isn't that recipe. The cabbage rolls that I am familiar with are cooked and you can whatever ingredients that you prefer. This recipe takes a little time and preparation, but is well worth it.
Ingredients for 2 servings:
8 - Large leaves of cabbage 1/2 - lb. of ground beef, veal or pork 3 - tbsp. of chopped (finely) onion 2 - tbsp. of chopped (finely) fresh parsley 3/4 - teaspoon sea salt 1/2 - teaspoon of thyme 1/2 - clove minced garlic 1/4 - teaspoon of red cayenne pepper 3 - tbsp. of butter 1/2 - cup of beef broth (boiling)
Preparation:
Take cabbage leaves and cook in boiling salted water for 3 minutes, drain and dry. Combine in a bowl the meat (not cooked), onion, parsley, salt, thyme and garlic. Mix well and divide into 8 portions. Take a portion and roll it up into a cabbage leaf (secure with a toothpick), repeat until all are completed. Place in a baking dish and put 1 tbsp. slice of butter on top of each roll. Pour beef broth into dish and bake uncovered at 375 degrees for 20 - 25 minutes (until leaves are very tender).
You could take the cabbage rolls and broth and serve on top of wild rice. You can serve this dish as an appetizer or as an entree. Man, I think within the next day or so, this is going to be on my menu.
This recipe is healthy and easy to prepare. You can serve as an appetizer or as an entree. Using different spices or sauces can make this a very versitile recipe.
