This is a very rich soup that if you have a formal dinner
party, you could serve this and impress anybody. This is the
kind of soup that will make you a reputation of Chef Status. If
it needs any more accolades, I can't think of any that would
give it justice. If I want to have a soup that will make me
feel special, I make this one.
Ingredients:
3 - lbs. of fresh tomatoes, peeled and 1/4ed
2 - Garlic cloves minced
2 - tbsp. of butter or olive oil
1 - Leek, chopped
1 - carrot chopped
1 & 1/4 - qrts. Unsalted chicken stock
4 - ozs. Fresh, crumbled blue cheese
1/2 - cup of heavy cream
2 - Fresh basil or parsley sprigs (your choice)
3 - Strips of bacon (cooked and finely chopped)
Sea salt and freshly ground black pepper
Preparation:
Now this is going to take a little work, but it is worth it.
Heat oven to 400 degrees and spread tomatoes in a shallow
baking dish. Salt and pepper and sprinkle the garlic on top and
roast for 30 minutes.
In a large sauce pan add the oil/butter, leek, carrot and salt
and pepper and cook for about 10 minutes over low heat. Stir
constantly to meld the flavors and not burn ingredients. Next
take the chicken stock and tomatoes add to sauce pan and bring
to a boil. Lower the heat, cover and simmer about 15
minutes.
Next add blue cheese, cream, bacon and herb and put in blender
and process until smooth, might have to do this in batches.
Taste and if necessary season to your liking. Reheat but make
sure it doesn't boil and serve.
Man if you don't get kudos for this one, you never will and it
is time to look for the door outta there.
