Beef Chili Recipe

I love chili especially when it is homemade as opposed to eating in a restaurant. Usually the flavor is lacking as well as the heartiness that you get when you make it from scratch at home. When I make chili I like to put a lot of vegetables into it, so if you don't like vegetables leave them out. Also I like it hot so here we go.

Ingredients:

1 & 1/2 - lbs. fresh ground chuck (leaner meat)
1 - Large Bermuda onion
1 - Clove of garlic (minced)
2 - 28oz. cans of crushed tomatoes
1 - Large can of kidney beans
2 - tbsp. chili powder
1 - Green pepper
1 - Red pepper
1 - Jalapeno pepper
1 - Bunch of scallions
1/2 - lb. of bacon

Preparation:

Cut up the bacon in 1 inch squares and place in a large pot and cook till almost done. Put in the beef and continue cooking. When beef is cooked put in garlic and the Bermuda onion and sauté for about 3 minutes. Put cans of tomatoes, kidney beans, jalapeno and chili powder. Salt and pepper to taste and lower heat to medium low, cover and simmer for about 1 hour. Next heat to medium and put in last ingredients (chopped red & green pepper and scallions) continue to cook for another 1/2 hour covered.

The reason for putting the peppers and scallions in last is you want a nice texture as opposed to mushy. The cans of crushed tomatoes has many flavors to choose from, so you can use different flavors everytime you make this recipe. You can serve this as a soup or over rice or on top of spaghetti and to top it off with shredded cheddar cheese.
